Using up those many tomatoes this time of year can be a pain. I started out by blanching ,ice bath ect 
Then I got smart and started roasting them.
heres what i do with what i have growing.
Cut tomatoes with skin on in roasting pans.
I do 2 pans at a time.
Then add vidala onion,green,yellow and red peppers,tomatillos and fresh Basil.
Sprinkle italian seasonings and then olive oil over the whole mess.
Roast on 400 for 30mins and then down to 300 for a couple more hours.
I then let it cool and run thru a collander and put back on top the stove for
another hour.
Now is when i been adding the celery and onions and sometimes italian sausage (fried out seperately)
I freeze in quart size freezer bags
