It doesn't have to be pork Italian sausage. I often buy the turkey. They make chicken too but I have not tasted it.

I do strongly recommend NOT trying the Morningstar Italian sausage because it is sweet and they did not firm up the tofu texture properly. Their other stuff is good though.

However, what I am cooking is baked chicken and rice.

4 chicken drumsticks (seasoned kind of hot and spicy)
3/4 cup rice
1 can cream of mushroom soup (yes, I have a surplus of soup lol)
1-1/2 cans water
Paprika
Salt and pepper

Mix the rice, soup, and paprika in a baking pan.
Add salt and pepper if desired.
Put the seasoned chicken on top
Add more seasonings and onion, garlic, scallions, etc. if you want
Cover with foil and bake for an hour and a half at 400.
Pull off the foil for about 10 minutes so the chicken gets brown.

Having a salad on the side and counting the minutes until it's done.

GReek Style Shrimp Scampi and Linguini

INGREDIENTS
Salt
Black Pepper
1 lb Linguini
1 lb medium to large shrimp (peeled, deveined, tails off)
1/3 cup Extra virgin olive oil
4 cloves garlic (thinly sliced)
1/2 tsp red pepper flakes
2 fresh oregano sprigs (finely chopped)
Handful of pitted olives (kalamata preferably) chopped
1/2 cup white wine
zest and juice of 1 lemon
handful of fresh flat leaf parsley leaves chopped
1 cup feta cheese crumbles


METHOD
Salt water for pasta and bring to boil
add pasta and cook to al dente <span style="color: #FF0000">(you'll need some of the pasta cooking water before you drain the pasta)</span>
season shrimp with salt. pepper and whatever else you like
While pasta cooks, heat the EVOO in a deep skillet and brown the garlic slices
remove garlic and reserve
add shrimp and cook for 3-4 minutes
Add red pepper flakes, oregano, olives, wine and lemon zest and cook for a coule more minutes
remove from heat
add a ladle of the starchy pasta cooking water to the sauce, then add lemon juice
add the drained pasta to the skillet
Let the pasta absorb the juices for a minute then toss with the parsley, feta and reserved garlic slices

Serves 4
