I'm struggling with what you call a bad cut because beef ribs definitely don't go on my list. As long as you take that sheath off, they can be grilled, baked, or bbq-ed to tender and well flavored perfection.

I think the chicken wings and oxtrails which used to be some of the cheapest pieces of meat are delicious. And based on the new higher prices, a lot of other people have discovered them too.

Turkey necks are great.

Also, pork neckbones are the truth.

For holidays, I cook the economical, old school ham with the bone in it and the skin that get's crisp outside. No Honeybaked and fancy spiral cut ham for me!

I love chicken gizzards but ust won't go anywhere near the livers. (Don't judge me lol.)

One thing I have never been able to get right is that cubed beef stew meat. I think I just don't like it because I don't like anyone elses either. Granted, I have had it tender but I still don't care for the texture of it.

That's about all I can come up with for now.

Oh and just about all cheaper types of fish like ground mullet for instance come out well as long as you season them and let them meet some hot oil.

Any kind of meat or the bones from the chicken you just ate -some people leave a lot of stuff like skin and cartilage- can be used as part of a soup base.

Take the toughest cuts of meat meat like mutton or goat or squirrel or mongoose, anything, and brown it up in a little oil add some browned onion and garlic, celery if you have it, s&p thyme etc., cover with just enough water and cook it down to tender .d You may need to add a little water along the way.
The liquid can be used to make gravy for the meat but do cook it down to just enough liquid.
