Post your ORIGINAL competition recipes yahso for the week of 11/13 - 11/18 - winner to be announced on 11/19.
RULES:

1. The recipe must be ORIGINAL - that means if mi google it and fine it posted elsewhere you will be disqualified (unless of course you were the person that originally posted it there)

2. You may enter only one dish per week - however you are free to enter every week if you so desire.

3. It must be something that you have made an nuh jus mek up inna yu head

4. The recipe must include measurable ingredients and distinct instructions on how to prepare the dish (eg. fling een likkle peppa wid de wata is not acceptable)

5. You may post your submissions Sunday to Thursday of each week - Friday is voting day and a winner will be announced by 4PM each Friday

Saltfish, <span style="font-style: italic">di cheap kind wid bone an skin</span>
Tomatis, <span style="font-style: italic">chopped fine fine</span>
Onion, <span style="font-style: italic">chopped fine fine</span>
1 Scotch Bonnet pepper, <span style="font-style: italic">chopped fine fine</span>
White vinegar <span style="font-style: italic">not much just fi taste</span>

<span style="text-decoration: underline">Method</span>
Soak saltfish in cold water overnight. Drain.
Boil some hot water. Pour over saltfish. Let sit for one hour. Pour off water.
Clean saltfish of bones and skin. <span style="font-style: italic">Put residue in dog food pot fi cook dung wid cornmeal latah</span>.
Chop up saltfish fine fine. Put in glass Pyrex dish.
Add tomatis, onion, scotch bonnet, vinegar. Taste to your liking. Add a likkle sugar if it too tart. Cover Pyrex dish tight and put in fridge.

Serve next evening with XLCR crackers.

Yesterday I had intentions for Chicken in Lemon sauce; instead I came up with this original and zany idea to use raspberry dressing, mango chutney and my favourite pinot grigio wine to come up with a divinely sweet and zesty flavoured chicken.

To the best of my knowledge, this is what I did...

Chicken in w/Raspberry and Mango Chutney sauce

Prep &amp; cook time: 40 mins

Ingredients:
1 1/2 lb chicken breast pieces cut in halves
2 tablespoon garlic powder
2 tablespoon Italian seasoning
2 tablespoon Chives
2 tablespoon Onion bits (dried)
2 tablespoon Marjoram
1 tablespoon fine black pepper
1 tablespoon salt
1 tablespoon Sage
Extra virgin olive oil (I use Medeiros)
Worcester sauce
Raspberry dressing sauce
3 tablespoon Mango Chutney
1/3 white wine (Pinot Grigio or Chardonnay)

Directions:
Wash the chicken breast pieces and pat dry. Place the chicken breast pieces in a medium depth frying pan. Lavishly coat and rub the Italian seasoning, chives, onion bits, marjoram, sage, black pepper, garlic powder and salt onto the chicken. Take 2 1/2 tablespoon olive oil and sprinkle over chicken and rub into the coated chicken herb mix. Set aside and let it marinate for an hour.

Cooking:
Sprinkle olive oil in the very pot which the chicken breast pieces are in and shift the breast pieces around so that the pan gets fully coated with the olive oil. Make sure the breast pieces are evenly spread out in the pan. Turn the stove onto a medium heat and lightly brown each side of the chicken. Cover the pan and let it cook for 10 mins (turning once). Sprinkle the Worcester sauce on both sides of the chicken as you turn. Then add 1/3 cup of white wine to the sauce forming in the pan. Turn down the flames and let it simmer for 10 mins. Add the raspberry dressing to the pan and ensure the chicken is coated with it on both sides. Cover pan and let it simmer for 10 mins. Add 3 tablespoon of mango chutney and using a fork, spread it over the chicken on both sides. Lower the heat, cover the pan and let it simmer for 8-12 mins (until chicken breast pieces are fully cooked).

(I served it over seasoned rice and used the sweet sauce on the rice. The sauce was very consistent and had a nice aromatic flavour of the herbs and the dressing sauces which I used.)

Tanya's chicken wings

a dozen free range organic chicken wings

Wash and season over night
season wid

black pepper
seasoning salt (Lawrys)
poultry seasoning
garlic powder.
Grace hot sauce.


Nex day

put some brown rice flour in a bag or bowl.
season wid the same tings used on the chicken minus the hot sauce.

coat the wings in the above

Lay on a baking tray lined wid parchment paper (no substitute)

drizzle on EVOO over the wings
drizzle on honey over the wings

pre heat oven to 400

put wings in oven and tun ie dung to 325.

bake for 50-60 mins.

This recipe came about from a failed attempt to make hashbrowns from scratch. After grating the potatoes, I took one look at them and determined there was way too much moisture for them to become crisp like I like them. Right about the time when I was thinking I should make mashed potatoes, I decided to make something else of it. The resulting “add this and that” project turned out to be a savory dish with a nice crunch on the outside.

<span style="font-weight: bold">Hashbrown Pancakes</span>

Ingredients:
2 or 3 grated baking potatoes
1/2 cup shredded cheddar
1/2 a white onion finely diced
1/4 a green bell pepper finely diced
1 clove of garlic pressed
1 egg
2 heaping tablespoons flour
Salt, black pepper, and paprika to taste
1 small can of sliced mushrooms bits and pieces drained (optional)
1/2 cup of shredded meat like chicken, lump crabmeat, or bacon (optional)
1/2 cup vegetable oil

Preparation:
1. Mix all ingredients except oil and flour in a bowl.

2. Add flour or enough extra so that the ingredients are bound together

3. Heat a couple of tablespoons of the oil in a skillet (preferably cast iron or non-stick) on medium low heat.

4. Put a serving spoonfull of the mix in the skillet per pancake and fry until completely set and browned and then use a spatula to flip and fry and brown the other side. Add more oil for additional pancakes as needed.

I sprinkle chopped fresh scallions on top when I’m finished. I serve with sour cream and salsa on the side.

Vegetarian Chili in slow cooker

1 can red kidney beans
1 can 6(5) bean medley
I small can corn (or 1 cup frozen corn)
1 can crushed tomatoes
2 celery sticks chopped
1 large carrot chopped
4 cloves garlic minced
1/2 yellow onion minced
2-3 stalks scallion (green onions)
1 tbsp crushed chili pepper
1 tsp chili powder
1 tsp dried rosemary
1 tsp oregano
2-3 cups water
salt to taste
few drops of grace browning

drain and rinse beans (yes to get rid of the extra sodium they are packed in)
add all ingredients to slow cooker except browning and cook on high for 4 hrs... add browning to get desired color with 1 hr remaining.

serve with corn bread or rice
