Sorry to be a little late in responding I haven't checked this forum for a few days.

It's not much of a recipe but oh so good.


As I said, I discovered this while staying at my house in Sheffield. I have cast iron pans there and one morning for no reason I can think of, I put some of the New Zealand Cheddar they sell at the supermarkets in Negril right on the frying pan surface and placed a half cocobread on top of it and put the fire on low.

You can use any kind of bread you like but a nice sourdough or any other bread with some texture will do and even those mushy hot dog rolls or hard dough will work.

I have even used broken pieces of bread, crumbs and all, stale bread will work too.
but stay away from green bread.

So... put the cheese on the frying pan put the bread on top and cook it real s-l-o-w or it will burn. When you see the edges just staring to turn brown flip it over and if it is all brown, it's ready to eat.
If it's still runny flip it back over, go get a cup of coffee and then come back and check it in a few minutes and when it's golden brown, it's done

I suppose you could use another kind of cheese but cheddar seems to have the right amount of fat to make the whole thing fry up right.

Jamaican processed cheese will not work, American cheese (also) processed) will not work. I've used muenster, mild parmesan and a few others but they are just not nearly as good.

Extra sharp New York Cheddar in the U.S. is the thing or that New Zealand Cheddar in Jamaica with cocobread can't be beat especially when dotted with pepper sauce.
Serve it with bacon and eggs for breakfast or make a sandwich with two sides of fried cheese cocobread and put in some jerk chicken or jerk pork sliced up in between .

Seriously , you won't believe how good this is.

I just got in contact with Cabot Cheese which is a farmers cooperative up in Vermont and gave them the recipe and THEY said they never heard of doing this with cheese but they are going to try it in their kitchen and will get back to me.

You do the same.

Also as said before, cocobreads each have about 350 calories from all the margarine they make them with and when you add the fried cheese you will need to get a defibrillator for when your heart seizes up from all that grease.

But you will die still chewing that last piece of fried cheese bread that they will have to pry out of your dead fingers in the emergency room
