As I lay in my bed this morning, I felt for a good Jamaican Sunday breakfast of saltfish, callalloo, boiled green bananas 
I got up and started opening kitchen cupboards, fridge, freezer to see what I could find. Here's how the breakfast ended up:
For the saltfish, I substituted some fresh wild-caught cod filet
For the callalloo, I substituted collard greens
For the green bananas, I substituted red-skin potatoes.
At least the seasonings were correct ... onion, scotch bonnet, tomatoes, thyme.
Gone goh book mi flight to Jamaica right now.
