What's cooking today chefs? I was really trying not to do too much today but everybody has a request \o/

Jerk Chicken ( at my nephews request - he doesn't even live with me \o/ )

I was told no big ball game will gwan today, but mi know is just buttering up for next weekend

well am not at home.....since the snow decide not to come to my town.....travel to find it to get likkle skiiing in.....hotel food half-decent.

So last night I thought I would try and ask the server if dem have oxtail....female a look pon mi like mi have two head....so I asked a lady of colour she smile and said no Miss we do not have that here.....then because she have a caribbean accent I asked her if she jamaican....she say no Grenadian.... oh well me still nevva get mi oxtail

So maybe I can live vicariously through someone here dat posting oxtail.

I cooked down a pot roast from a marked-down boneless chuck roast last night.

Today I'll be making a roast chicken that will be sitting in a pyrex dish on cut up white sweet potatoes, carrots, onions, celery, Idaho potato (irish) , sage, thyme, bay leaf, S&amp;P and a bit of chicken stock and ketchup.

(My local supermarket has been carrying white sweet potatoes that have that same oval shape as the mushy orange things (yams) but the skins are white(r) and the texture is much more like the sweet potatoes with the red skins in Jamaica and my wife loves them)

Tomorrow I HAVE to make Greek spinach pie before the two big bags of spinach go bad on me; a tedious if rewarding job.
