Breakfast
Crunchy Granola with fresh blackberries and blueberries.
Cup of peppermint tea no sugar.
Dinner
Pan seared chicken strips with onion, skellion, tomatoe, green pepper, red pepper, hot pepper and crushed garlic.
Stirred fry cabbage with yellow/green zucchini, baby spinach,onion,skellion, thyme, red/green pepper,tomatoe and garlic.
Unsweetened almond milk

Breakfast:
Cottage cheese pancakes w/cut up strawberries, maple syrup for niece Ashlee
recipe: separate two eggs- whip whites into meringue.
mix yolks w/ 2 tbsp sugar or Splenda and 1/2 tsp salt and a tsp of vanilla
In a large bowl mix 1 cup flour w/1lb cottage cheese (room temp) mix in yolks then gently fold in the meringue (do not mix hard as this breaks all the little bubbles in the meringue needed to lighten the pancakes) . Keep folding in the meringue until the batter is an even consistency.
Fry in an oil/butter mixture. Can be served with cut up strawberries mixed in with mashed strawberries for a nice topping or honey or maple syrup or any vriety of jam or jelly.
The cottage cheese adds protein to what would be just white flour and the eggs, Nutritious breakfast for the kids.
Dinner
Baked Sole (sweet white ocean flat fish) with an onion, celery, mushroom, garlic, cheddar cheese and Italian bread crumb stuffing probably w/ Hollandaise sauce, cole slaw,
baked Idaho potatoes w/ sour cream, toasted sesame seeds, chopped garlic chives
Dessert: Concord grape pie w/ French vanilla ice cream
(Grapes are frozen from last fall's back yard harvest.)Comment
