Me Feel Fi Some Porridge

I have a sudden craving for a nice bowl of cornmeal porridge, wid chunks of hard dough bread.

Long time me nuh cook dat, my recipie is very basic:
cornmeal
vanilla
nutmeg
bay leaf

What do you put in your porridge? I think I am going to make it for dinner tonight, if me hear of anything tempting I might alter my recipie.

i know that some people put coconut milk

Oh yeah, I think I have done that a couple of times. That gives it a sweeter taste, don't think my taste buds are leaning towards sweet today.

I made porridge two days ago but it was Chinese rice porridge which you can only get in restaurants where mainly Chinese eat or make it yourself.

Also called congee by the Chinese.

12 cups of water (or chicken stock/ water mix, 1 cup regular white rice a couple of slices of ginger and a pile of chicken bones, necks, backs, maybe a small chopped onion . (Even carcasses of roast chickens or turkeys can be used ). Throw everything in a big pot bring to a boil and then simmer low for about 1-1/2 hrs, fish out the bones and anything else you don't want to eat. Then return it to the heat and cook another 1-1/2 -2 hrs or until the texture looks agreeable to you. Add about 3-4 tbspns of soy sauce and mix in well- less if you've already used salted chicken stock to make the porridge.
Beat up about 3-4 eggs and trickle them into the simmering porridge and let sit for a minute and then beat the egg strips into small pieces within the porridge.

Here you can add chicken pieces, bok choy, calllaloo or okra or green beans or fish or beef -whatever appeals within the chicken-rice flavor of the porridge.
Put a portion in a bowl and mix in about a teaspoon of toasted sesame oil , top with chopped scallion and enjoy.

Very good with scallion pancakes ( sold frozen at the Chinese supermarkets and which you fry in peanut oil til crisp and nicely brown)



I suspect the reason rice porridge isn't made in Jamaica is because of the long cooking time and the cost of fuel..

Rice porridge is made in Jamaica but not with all them things u mention ... it is like any hominy/bulgar kinda porridge.

Sweets I put the milk in when it actually done cook.

Porridge was good, but I didn't have any bread.
