I saw a cooking show on which they cooked up geoducks ( pronounced gooey -ducks).
Like all shellfish you don't overcook them and they're fine. If you like steamed clams you'll like geoducks and unlike steamers, you don't need half a bushel of those things for a meal.
They're great ground up for fritters, the neck/siphon is good raw with lemon and the bellies are excellent breaded and fried.
Only grown in the northwest of the U.S. (Washington state) and British Columbia
now very popular and probably expensive.
