I think applesauce is used a substitute for eggs in baking...but for butter i'm not too sure.

i think that the butter and mayonnaise keep the cake moist...don't know if the applesauce would have the same effect

Vegetable oil Gen or u can always use <span style="text-decoration: line-through">plastic</span> a mean margarine.

Butter-free Banana Bread

Ingredients

4 ripe bananas, mashed
2/3 cup white sugar
2 eggs
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/2 teaspoon salt



Directions
Preheat oven to 350 degrees F. Spray one 8x4 in. loaf pan with Pam cooking spray, then set aside. In a large bowl, sift together the flour, baking powder, cinnamon, and salt. Set aside.
In another large bowl, mash the bananas and stir in the eggs, one by one. Add in sugar and vanilla extract. Stir in the flour mixture and mix until just combined. Pour the mixture into the loaf pan. Bake for 55-65 minutes or until bread tests done. Do not over cook. Remove from oven and cool on a rack for 15 minutes. Remove from the pan and cool completely. Slice, serve and enjoy this low-fat, easy to make - easy to eat, banana bread!

This one probably dry too...but is healthy u want (u know i saw one where them use yogurt...but them only use a little less butter...)

For This Banana Bread Recipe You Will Need:
1 cup all purpose flour
1 cup whole wheat flour
1/2 cup brown sugar (or you can also use honey, check out the honey banana bread recipe)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 egg
1 1/2 cup mashed bananas (4-5 bananas)

1. Mash the bananas and beat the egg. Now mix them both together with sugar (or honey), salt and cinnamon.

2. Now take a large bowl and mix in flour, baking powder, baking soda and the mess you made in step one (just kidding about the mess ).

3. Stir and you are done. Now all there is left to do is pour the batter into the bread pan and bake at 350F (180C) for 50 minutes. You can test the bread by sticking a knife into the loaf and if it comes out clean it is finished.

Preparation

Lightly spoon flour into dry measuring cups; level with a knife. Combine the flour, baking soda, and salt, stirring with a whisk.

Place sugar and butter in a large bowl, and beat with a mixer at medium speed until well blended (about 1 minute). Add the eggs, 1 at a time, beating well after each addition. Add banana, yogurt, and vanilla; beat until blended. Add flour mixture; beat at low speed just until moist. Spoon batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray. Low Fat Banana Bread


Ingredients

1.5 cup flour
1.25 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/8 teaspoon salt
1/4 teaspoon vanilla
2 egg whites
1 cup mashed banana
3/4 cup sugar
1/4 cup applesauce



Directions
Combine banana, egg whites, applesauce, sugar, vanilla, and cinnamon. Add dry ingredients (flour, baking soda, baking powder, salt) until well mixed. Pour batter into bread pan sprayed with cooking spray. Bake at 350 degrees for 40-50 minutes or until toothpick inserted into the loaf comes out clean.

I use 1/2 cup organic cane sugar in the original recipe in this post instead of 1 cup and 4-5 bananas. the bananas and the 2 eggs is nuff nuff moisture ... and you can put in apple sauce too in fact you can replace the eggs with 3 tbsp of apple sauce but in the absence of butter/oil I dont know how it will affect it. I've replaced the eggs with flax seed and it was moist ... ppl keep asking for it and my zucchini bread so I am taking it that it is really good.
