Because mi cudden wait lass nite mi strongarm di pan chicken man fi give me some partially cooked chicken so mi finishing dat up in di oven along wid a pot of rice and pease. Mi have some beef ribs from di party. Gonna steam some veg and voila! Dinner. Have some rum cake and marble cake from di party. Serving wid vanilla icecream an fruit cocktail an we good to gone!
Having been without an oven for nearly a year and finally having the new oven installed recently, I am <span style="font-style: italic">so</span> turning it on today making:
a ground beef stew w/chopped okras, diced tomatoes and green peas
steamed buttered rice with chopped carrots and green beans in it -- i didn't do enough of that; then jumped to diced red-skinned potatoed sauteed in buttery sauce. then i changed my mind and dumped an entire pack of spiral macaroni or whatever the Italians called it in a pot of boiled water.
so here i have a smorgasborg of food put together. the groundbeef stew is very delicious and so was the buttered rice veggie mix.
Sunday dinner this evening was cabbage salad, pressure-cooked Ghanaian soybeans (they taste good!) in a rich Ghanaian stew with a little of the local lightly smoked tuna, tabouleh and the best wholewheat pita I have ever eaten anywhere. They sell it in a Lebanese supermarket in Osu. We tear off a little piece of pita and use it like chapati to eat the beans. And fresh fresh orange & lime juice.
late dinner today since I went to church bbq/workday so there was corn on the cob, hot dogs, burgers, salad, water melon, strawberries and banana bread and chips.
