Anybody cooking today? HE came home last night, so there is an expectation of a big dinner today.

Potato Salad or Mac and Cheese (his choice)
Garden Salad

diabolical_T, I have tried all types of ways.

My current way is the easiest. I use one garlic clove per drumstick, a dash of white vinegar, and eyeball white onion, scallion, and basil. Put it in the blender. Poke a few holes in the chicken with a fork. Put everything in a plastic bag and add your preferred dry seasonings. (I like Goya and cayenne pepper.) Massage a lil bit.

Let it sit in the fridge overnight and bake.

Covered but last 10 minutes uncovered because I like the outside a lil brown. If you have any skin on it, bake it uncovered for 15 minutes.

If I wanted to stuff it, I would not leave it to soak overnight. It sucks it up which is why I punch the holes.

Now if we're talking about a roast, that's different story.
