today's grilled bell peppers (red, green, yellow and orange) was really a complement to the roasted jamaican snapper and the asparagus. Since I plan on cooking out there at least once a week while the good weather lasts I need ideas.

I love <span style="font-weight: bold">grilled portobello mushrooms</span>. Here's a recipe that looks pretty much like how I make them: http://allrecipes.com/Recipe/grilled...ms/detail.aspx
Ingredients
3 portobello mushrooms
1/4 cup canola oil
3 tablespoons chopped onion
4 cloves garlic, minced
4 tablespoons balsamic vinegar
Directions
1. Clean mushrooms and remove stems, reserve for other use. Place caps on a plate with the gills up.
2. In a small bowl, combine the oil, onion, garlic and vinegar. Pour mixture evenly over the mushroom caps and let stand for 1 hour.
3. Grill over hot grill for 10 minutes. Serve immediately.
I use olive oil instead of canola oil and probably about half the balsamic vinegar they directed. Looks like they put a little rosemary on the side on the picture below.

<span style="font-weight: bold">Tropical Fruit Kabobs</span>
<span style="font-style: italic">Serves: 4</span>
1/2 cup turbinado sugar (raw sugar)
1/2 teaspoon cinnamon
Pinch of nutmeg
Chunks or slices of ripe tropical fruits such as mangoes, papayas, bananas,or pineapple (about 20 to 30 pieces)
1 can (14 ounces) unsweetened coconut milk
Sprigs of fresh mint for garnish
Bamboo skewers, soaked in water to cover for 1 hour, then drained
Ice cream (optional)
Combine the sugar, cinnamon and nutmeg in a small bowl. Skewer the fruit on the bamboo skewers, alternating fruits, 3 to 5 pieces on each. Brush with coconut milk, and sprinkle with the spiced sugar.
When ready to cook, brush and oil the grill grate. Arrange the skewers on the hot grate and grill until nicely browned on both sides, 3 to 4 minutes per side. Transfer to plates or a platter for serving, and garnish with mint leaves, if desired. Or serve ice cream in chilled martini glasses (or bowls) and accompany with the fruit skewers.

<span style="font-weight: bold">Grilled Quesadillas</span>
<span style="font-style: italic">Makes 48 wedges, enough to serve 8 to 12 as an appetizer, 4 as a light main course</span>
<span style="text-decoration: underline">for the filling</span>:
1/2 cup sour cream
1-1/4 cups coarsely grated jack or sharp white cheddar cheese
2 scallions, thinly sliced
1 ripe tomato, peeled, seeded, and finely diced
1/4 cup fresh cilantro leaves
2 to 3 pickled jalapeno chilies, thinly sliced (for spicier quesadillas, use thinly sliced fresh jalapenos)
1/2 teaspoon ground cumin
salt and freshly ground black pepper
8 eight-inch flour tortillas
1. Combine the sour cream, cheese, scallions, tomato, cilantro, chilies, and cumin in a mixing bowl and stir to mix. Add salt and pepper to taste.
2. Preheat the grill to medium-high. Lay 4 tortillas on a work surface and spread the sour cream mixture evenly on top. Press the remaining tortillas on top to make a sort of sandwich. Grill the tortillas until lightly browned on both sides, 2 to 4 minutes per side, turning carefully with a large spatula. Cut each quesadilla into 8 wedges for serving.
