Ingredients
1 cup unbleached all purpose flour
1 cup whole wheat pastry flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp sea salt
1 cup mashed very ripe banana
1 cup raw cane sugar (you can substitute what u like)
1/4 cup plain, fat-free yogurt
1/4 cup prune puree or unsweetened applesauce
2 large egg whites
1 tsp pure vanilla extract
1/4 cup chopped pecans toasted

Preheat oven to 350. Lightly coat a 9x5-inch loaf pan with cooking spray and dust with flour; set aside.
In a medium mixing bowl combine flours, baking powder, baking soda, and saltthe dry
In another mixing bowl combine the banana, sugar, yogurt, applesauce, egg whites and vanilla. Whisk until blended, about 2 mins. Add the dry ingredients to the banana mixture, stirring with a wooden spoon until just moistened. Spoon the batter into the prepared pan. Sprinkle the pecans on top of the batter.
Bake for one hour or until a wooden pick inserted in the centre comes out clean. Cool in the pan on a wire rack for 10 mins remove from pan and cool completely. Cut in 14 slices to serve.
