Coconut meat noodles

I was reading this article in the Gleaner about a vegan chef in Jamaica when I saw a photo of one of his creations - a delicious "pasta" made from coconut meat



Lawd, I bet it nice like as a pad thai style

I did some research and found young coconut noodle making tool. I'm going to see if I can find young coconuts at the Asian supermarket before I buy the tool.

Just think of the possibilities
