Vegetarian cooking

I have had to be creative in my menu choices here because there are always vegetarians amongst the guests when we entertain now.

I must confess that I am very limited when it comes to this... I am in the the mecca of vegetarianism but when we have people over I would like to offer my own vegetarian dishes and not the ones they can get anywhere here.

I am looking for suggestions on good dishes (especially entrees) would be nice if they had a Jamaican twist...

This is a list of the dishes I have offered on previous occasions.

- Vege Stew Peas
- Curried Lentils
- Jerk Oat Burgers
- Cabbage and Butter Beans

Years ago I experimented with Tofu - but it was a Fail in my opinion and I have never had the heart to try again

So all suggestions and recipes are WELCOME!

Hey there Jazz. Here's a tasty one that I rarely run across. My Trini friend used to cook it for me:

<span style="font-weight: bold">Christophene au Gratin</span>

4 Chayote Squash
1 medium onion, finely chopped
3 garlic cloves, finely chopped
½ scotch bonnet pepper, seeded and chopped
2 tomatoes, chopped
2 tbsp dry bread crumbs
1 cup grated cheddar cheese
½ stick butte
1 tbsp curry powder
Salt and black pepper to taste

1. Preheat the oven to 350º.

2. Bring the chayotes to a boil in salted water then lower the temp and simmer until tender, about 25 minutes. Drain and cool.

3. Halve the chayotes lengthwise, scoop out the flesh and discard seeds. (Leave about 1/8” flesh intact inside the shell.) Chop pulp into bite sized pieces and then mash half.

4. Melt the butter in a skillet over medium heat and saute the onion and garlic until tender but not brown.

5. Add the chayote, tomatoes, pepper, curry powder, salt &amp; pepper and cook, stirring frequently, for about 2 minutes.

6. Stir in the bread crumbs and ½ cup of the cheese and remove from heat.

7. Spoon the mixture into the chayote shells, sprinkle with remaining cheese, and bake until lightly browned, about 15 minutes.

Twiney - do you mean what do they have here?? think typical Indian food lots of Dahl and other types of beans with that similar soupy mixture (don;t know all the names)

mmmmmmmmm Tulip this sounds really good and simple too...
but by chayote squash - you mean pumpkin?

OK another question Tuls...

it says mash half of the chayote and I assume that is the mash up half yuh combine with the sauteed veggies...

so what happen to the other half? just dash it weh?

I guess there won;t be enough space in the shells once you add the veggies to the mixture... maybe I can just bake it in another container...

wonder how the curry and the cheese will taste?

I think I am going to try it this weekend and see how it turn out.

I do a curry veggie pasta couple times an now de ppl won't stop request it, yuh inna de curry mecca tuh so...

Jazz, you add both the cubed and the mashed to the skillet. Shove it in there; it'll all fit and the cheese will catch what doesn't. I'll edit the recipe to clear that up and also to add &quot;cho cho&quot; lol. I forget who calls it what like <span style="font-style: italic">christophene</span> is what Trinis call it I guess. But when shopping in the farmer's markets here, it is called <span style="font-style: italic">chayote squash</span>.

The cheese and curry tastes surprisingly good together. Sometimes he used parmesan, but I liked the cheddar better. Think of it as paneer from the western hemisphere.

Speaking of pasta, I was thinking about Italian dishes too. I have a really good ratatouille recipe, but it's on another laptop. (Yeah, I got curious and tested out some after that pixar movie lol.) I'll post it later.

Jazz what about stir fry with snow peas sweet peppers etc with thia noodles with soy sauce or teriyaki w/ginger sauce.

banana fritters
vegetable rundown (my small island friends don't usually mek rundown with meat dem usually just bwile dung the cokenat milk and then add in the yam etc)
red peas soup
pepper pot soup
ackee (yuh mek ackee yet fi dem )
pudding (cornmeal &amp; sweet potato)

mi see the grace veg soup mix I am guessing something can gwaan wid pumpkin, carrot and whole corn
