Skate - it's whats for dinner tonight

[Peasie]

This is a nice tasting fish A foodie friend made this for me the other day

Skate wing - boneless, skinless
oil for sauteing
chopped shallots
chopped garlic
salt and pepper to taste.

You can figure out the recipe. She tells me that skate is now popular with the TV chefs. Anybody ever had it?

No, RichD, it is a tender yet firm meat. Has a nice ocean flavor. Very easy to cook. You buy it filleted
