seeking a pepper sauce recipe ????

a friend of mine is looking for a pepper sauce recipe for her over abundance of habaneros

does anyone know how to make the pickled peppers like my granny used to make? the one with fancy cut carrots and I think cho cho in the jar with ??? vinegar?? and mi noh know what else but I used to loooooooove it.

That's not a sauce, that's pickled peppers and if she added carrots and tings, den it's pickled veg....

Pickling is easy: add all the peppers and veg that you want. Hardier veg are best (ie carrots, small oinions, celery for those who like it...)

Put everyting eena one har wid good vinegar, some sugar, some pimento. Garlic if yuh like and maybe some fresh herbs. Lock it up tight and put ie dung...

Scotch bonnet peppers - prolly. If you're afraid of the heat. My mom does not blanch them, she just washes them and checks to make sure the skin isn't broken. That way we'd get the flavour from the skin and not the heat from the seeds.

Don't blanch the carrots. Just cut them about 1/5th of an inch.

btw, peasie, since you love olive oil, you can consider pickling your peppers in an olive oil & vinegar combo. The difference between doing this and doing a vinegar/sugar etc pickling, is that you would use mostly olive oil and just a splash of vinegar. The vinegar would prevent your peppers & veg from going black or tasting funny.

2 years and finally something I can help with in the cooking thread lol. My ex is Trini so so I'll come with more of a TnT style than Jamaican.

Well, this turned out to be more of a challenge than I was expecting. His mother hand wrote those recipes for me and all I can find is the green seasoning recipe. I'll have to rectify that (we still can't agree whether scotch bonnet or haberneros are hotter or mostly the same) but what exactly is she trying to do?

After googling a bit, the following recipes seem very similar to what B wrote.
