Along with a salad, lunch today was a red bean/chicken sausage/quinoa stew I made yesterday. I adapted the recipe from this substituting rice with red quinoa. I made enough for four zip-loc bags that are now in the freezer and for lunch next week
I'm a little south of the band of Winter weather that is hitting the Northeast of the US. Just having some "wintry mix" here.
(The saltfish soak and drain and in the fridge. Will tackle this weekend.)Comment
