Sunday Potato Salad

I loved the potato salads from my childhood served on Sundays and special occasions. When I made the same recipe my American friends were like, "Whoa. You put peas in your potato salad??" I never liked the American version with mustard and relish. Yuck.

What is your favorite potato salad recipe? Here's mine:

• Red skinned potatoes peeled and cubed. Boil in salted water until just cooked. Drain.
• Drain cooked potatoes in colander. Let it drain for at least two hours until it cools to room temperature and is dry. The longer, the tastier.
• Hellman's real mayonnaise
• 1 medium shallot chopped very finely
• fresh celery chopped very finely
• white pepper to taste
• salt to taste
• dash of
• 2 tsp. red wine vinegar
• No boil egg

I don't like potato salad and i won't be trying the recipe

but is true..is the smell of the egg and the mayo together that put me off it. So I would be more likely to make this than the other type my mother normally make, if somebody forced me to make it

I had yellow yam salad this past weekend. I know I have had it before, but the one I had this weekend was delish! I have a potato salad recipe that I started using a couple years ago. Actually I got it from Jazz. Me soon come wid it, Backra a mek me earn my dollars today.

The recipie is similar to any traditional potato salad recipie, the only difference is sauteed extras.

Saute in olive oil:

celerey
onions
sweet peppers
and any other veggie or herb

Saute lightly to maintain crunchy texture. Season with salt and garlic. (I have also used all purpose seasoning).
Fold into potato salad mixture and chill.

I sometimes use Italian dressing instead of mayonnaise in my potato salad.

It adds amazing dimension to potato salad. And I have used raw celery and peppers in potato salad, but when they are sauteed and seasoned they bring an added bang.
