Creative Dishes with Vegetables

Vegetables leave me cold but they are a necessity. So when I need to use a caterer, I look for them to come up with creative side dishes as options to a boring salad. They tend to come up short so I end up having to do the research when they are supposed to be the experts.

Anyway, this is what I've come up with so far:
