Hand to God - these are the fishes that were both (1) the freshest and (2) not too big for just two people (Mr Witchy and me) when I went to the fish market this afternoon: Porgies ... and Bass steaks.
So, tonight we are actually eating "Porgy and Bass". dwl
Gonna cook the fishies in some sweet butter and herbs freshly cut from my garden - homegrown fennel, tarragon, basil.
Start of with a plate of sliced homegrown tomatoes and dress it with Italian basil, Greek basil & Thai 'Queen' basil also from our garden and a few pinches of salt and a drizzle of XV Kalamata olive oil.
Add some really seriously really fresh baby asparagus that we'll steam lightly and drizzle with some melted sweetbutter and a pinch or two of pink sea salt.
