INGREDIENTS:
2 cups all-purpose flour
2 cups sugar
1-1/4 teaspoons baking soda
1 teaspoon salt
3/4 teaspoon ground nutmeg
3/4 teaspoon ground cinnamon
1 15 oz can pumpkin (don't even think of using fresh pumpkin - it is too mushy)
1/3 cup water or orange juice
2/3 cup vegetable oil
2 eggs
1/2 cup chopped walnuts or raisins or both
DIRECTIONS:
Makes two medium size breads
1. Grease (Pam spray!) two 7 x 3 inch bread pans. Preheat oven to 350 degrees F (175 degrees C).
2. Measure flour, sugar, baking soda, salt, and spices into a large bowl. Stir to blend. Add pumpkin, water, vegetable oil, eggs, and nuts. Stir gently until well combined. Pour batter into prepared pans.
3. Bake for approximately 1 hour.
