I cook snapper this way for my wife.
I use the whole fish just for presentation even though my wife doesn't touch the head.

I make two diagonal slashes across the body down to the spine and stuff them with green onion/scallion sauted in butter and with just a touch of fresh garlic.
I then broil the fish laying it on foil and wrapping it up the side but not covering the fish. Cook it on both sides turning it when one side looks done enough and before it burns.
If you're in Jamaica you can also cook any fat/ not flat fish this way
