True the monkfish will not win any beauty contests but it is a truly delicious fish.
Julia Child once prepared one on her old TV show and that show became a classic.
The fish as we have ll seen is shaped almost like a triangle with the head and big mouth taking up the big end. The only part that is used is the section behind the head which is essentially the tail,.
Julia Child used a big cleaver to chop off the section she wanted but I would imagine you could make one [censored] pot of fish soup with that big ugly head.

The raw fish is not pretty either being sorta gray with pink streaks through it but it cooks up white much as does tuna and kingfish which are also not white to begin with.
Anyway, if you can find monkfish it almost never comes whole but just as nicely cleaned up filets.

Try it. It won't bite you.

I cook snapper this way for my wife.
I use the whole fish just for presentation even though my wife doesn't touch the head.

I make two diagonal slashes across the body down to the spine and stuff them with green onion/scallion sauted in butter and with just a touch of fresh garlic.
I then broil the fish laying it on foil and wrapping it up the side but not covering the fish. Cook it on both sides turning it when one side looks done enough and before it burns.
If you're in Jamaica you can also cook any fat/ not flat fish this way

My favourite way to cook fish is to rub it inside and out with a mixture of salt, scotch bonnet pepper, pimento an escellion that I beat together in a mortar before mixing with a small amount of vinegar or lemon juice, before stuffing with seasoned steamed calaloo and/or okra, then rub with butter or margarine, wrap it in up tight in aluminium foil and place it on the grill. Served this and jerk chicken at my last birthday party. The majority choose chicken and started complaining after bout how mi wicked fi mek dem full dem belly with chicken when di fish so nice, which neva stap dem fram nyam ahf di fish.

My second favourite way is to steam gummy fish like doctor, potcover and the ugly fish with the two yeye dem pan di same side a him head, well season dung with escellion, scotchie, tomato, pimento and salt and okra using likkle butter or margarine and water. Di Tuff crackers ongle go in likkle before di fish dun, so dat dem stay gummy.

Mi definately going to see if mi get some fish today. Easter mi did fry wholeheap fish including some herring sprat whe mi go buck fresh inna wan turkish shop. dem did nice so till.

It look like de físh monger dem gi yu di one dem whe owl and tuff, so there is nothing you can do about dem.

When yu buying, look for the ones dem whe bluish grey, they do not usually curly up like the dark grey one dem, and avoid de likkle one dem, dem ongle look likkle but dem usually tuff like Miss Mary heel back. Avoid di mawga one dem and tek di one dem whe look well fat cause dem de no curl up.

Di fish monger dem usually know which one fat and which one dem mawga. Warn dem dat yu no want none whe a go curl up inna yu pot ar dem affi talk tu yu afta.
