Here's 2 recipes, pick yu choice:
Fram Real Taste of Jamaica cookbook
Pepper Shrimp (This is hot and spicey)
Ingredients:
5 pounds shrimp, rinsed well and left in shells.
1 cup oil
2 cloves garlic, minced
2 teaspoons salt
2 scotch bonnet peppers or 6 bird peppers, chopped
2 tablespoons vinegar
Method:
In a heavy dutch oven, put oil, garlic, salt and peppers to heat.
Add shrimps and stir for 5 minutes.
Sprinkle on vinegar and cook for a further 5 minutes.
Cooks tips, 5 pints of water can be used instead of the oil, boil everything together, except shrimps, for 10 minutes. Add shrimps and cook for 10 more minutes.
Alternative recipe from Jamaican Cooking Book
Pepper Shrimps
1 pound shrimps, unpeeled with heads and tails left on.
3 tablespoons salt
1/4 cup water
4 scotch bonnet peppers(any color) seeded and minced.
Method:
Place the shrimp and salt into a medium-size sauce pan and mix gently with your hands. Add the water. Distribute the minced scotch bonnet peppers evenly over the shrimp. Over high heat, bring the shrimp to a boil, then cover the pan and cook for 4 minutes, stirring after each minute, or until the shrimp are pink and cooked through. Remove from heat and chill before serving.
Note, you can make this less spicey by adding 1 whole scotch bonnet pepper instead of 4 minced.

tank u Simmy. di next time mi will buy more red scotch bonnet mi had mostly green and yellow ones so dem never come out as red as mi would like and mi will measure di vinegar properly next time..dem was a lickle soggy
but oderwise dem good! one more ting, next time remind me fi print yuh post and carry inna di kitchen and stop rely pon mi memory fi cook it
