I have a recipe for curried shrimp, Im sure lobster can be cooked in the same way.
1 1/2 pound of shrimp, peeled and deveined
1 medium size green bell pepper
1 onion
1 small scotch bonnet pepper
curry powder
seasoning salt
black pepper
wash shrimp and pat dry, season with surry powder, salt and pepper.. cut up the onions and peppper(s) into small peices( be very careful with the scoth bonnet pepper, extremely hot, use according to your taste), let marinate for about an half hour or so
Heat a medium skillet with a small amount of oil, put in the shrimp without the pepper and onion and set to cook for about ten minutes, after ten minutes add about a cup of water(use your judgement) and add the peppers and onion to the pot, turn the heat down to low and let simmer for about another 15-20 mins until water has been reduced.. ( Do not overcook the shrimp as it will get rubbery, doesnt taste good rubbery)... Serve over plain steamed rice,with plaintain slices.
CURRY SHRIMPS MISS PEACHES
1 lb. raw shrimps, peeled
1 onion, chopped
2 fat cloves of garlic, finely chopped or pressed
2 Tbsp celery leaves, chopped
½ green or red pepper, chopped
1 ripe tomato, chopped
1/3 Scotch Bonnet, finely chopped (optional)
½ tsp. rubbed thyme
2 Tbsp. mild curry powder
½ tsp. salt
black pepper to taste
1 Tbsp. Chinese peanut oil
1/2 lime
1 Tbsp. butter (optional)
Squeeze juice from lime half onto shrimps, mix with hands.
Rinse in strainer under running water. Set aside.
Heat a broad non-stick frying pan or non-stick wok, not too hot
Put in peanut oil and saute the onions 3 minutes over medium heat
Add garlic, peppers and thyme, saute for 2 1/2 minutes.
Add tomato, celery leaves and curry powder, lower heat to medium low
Cook, stirring constantly, for five minutes
Add a few drops of water anytime it’s threatening to burn.
Add shrimps and butter and stir until they are firm and turned pink
Be careful not to overcook them
This should take only about 3 minutes maximum.
Add salt and black pepper to taste.
Serve with plain boiled rice
Et voila. Bon apetit
