can someone help mi i need recipes for oxtail and stewed peas, steam fish and rost fish.

Oxtail
2 lbs oxtail
1 onion chopped
2 stalk escallion
3 sprig of thyme
4 cloves garlic
1 teaspoon salt
4 tablespoon soya sauce
4 tablespoon ketchup
1 teaspoon blackpepper
6 pimento seed crush
1/4 cup cooking oil
1 hot pepper cut up
mix it all together an let it sit for about an hour or more if yu caan stand it DWL. heat the oil in a heavy sauce pan,like a duch pot, remove de seasoning an fry oxtail till nice an brown,do not crowd de pat, drain de oil an leave abot 4 tablespoon, fry the seasoning and den replace the oxtail add a little water at a time and cook until soft about an hour,enjoy an mek mi know

Stew Peas
2 cups red peas
1/2 lb salt beef
1 lb stew beef (you also can use pigstail if you like)
1 scotch bonnet pepper
2 stalk escallion
3 sprig thyme
2 cups coconut milk(or 1/4 box)
6 pimento seed
3 cloves garlic
salt and pepper to taste
spinners
boil and drain salt beef twice, in a medium size bowl place peas,meat and garlic,boil until peas is tender about 1 1/2 hour,add coconut cream,spinners,and seasoning,cook for about an hour,taste,adjust seasoning if need thicken mix 3 tablespoon flour with 1/4 cup water strain in stew,boil until thicken serve with rice.

here is the fish
Steamed Fish
2 lbs fish
2 oz butter
1 small onion
2 med.tomatoes
2 stalk escallion
2 sprig thyme
1 scotch bonnet pepper
2 tablespoon ketchup
2 tablespoon soya sauce
3 cloves garlic
5 pimento seeds crushed
salt and pepper
5 tablespoon cooking oil
1/2 cup water
Clean fish,season with salt and pepper, fry in hot oil,for about 5 mins on each side,remove to a plate. in the same oil add onion,escallion,pepper,thyme,tomatoes and garlic fry for 5 mins,add pimento seed,ketchup,soya sauce,salt and pepper cook for 3 mins. add water,stir, lay fish on top cover steam for 3 mins,take a spoon and lift some of the sauce over top of fish turn over gentle,add butter,cover steam for about 8 to 10 mins.turn off fire,let it sit for about 10 mins serve.

Roast Fish
1 butter fish or red snapper or turbut about 2 lbs
1 teaspoon paprika
1 scotch pepper
3 tablespoon butter
1 small onion
1 clove garlic
1 sprig thyme lime
wash fish with lime. dry, season inside and out with salt and pepper and paprika,to the inside add onion,garlic, pepper, thyme,place in double wrap heavy duty foil, place butter on top of fish seal,roast either on a BBQ or in a 350 degree over for about 3/4 of an hour.
you can also forget the paprika,onion and pepper,garlic,grill for a few mins.5 mins on each side then serve.

2lbs Oxtail

sprig of thyme
1 stalk or escallion

1 scotch bonnet pepper(diced...very hot, be careful)
3 tablespoons soy sauce
can of butter beans
wash oxtail with lemon juice or vinegar to eliminate some of the rawness and then pat dry.. season with salt and pepper, soy sauce, and the diced peppers, garlic, thyme,onions and escallion.. let marinate for 45 mins.
In a dutch pot or heavy pot, heat some oil, not too much oil and fry the oxtail until they are brown, when all peices have been browned, remove from pot and discard the oil leaving only about 3 tablespoons...r eturn pot to fire with remaining oil and put the meat with all the seasoning in and add a cup and a half of water, turn the fire down to slightly medium and let cook for about and hour until meat is tender, ten minutes or so before you turn off the stove add the butter beans to the pot so that they can get heated... Serve with plain steamed rice or rice and peas
Steamed fish
This can be done two different ways.. one is an oven method and the other is a stovetop method
Oven Method
4 or 5 medium sized Fish
salt
pepper
okra(optional)
onion
callaloo, spinach or cabbage
escallion
thyme( pull the leaves of the stick)
string beans
1 stick of butter
wash the fish with lemon juice and pat dry.. season the inside and outside with the slat and pepper. In a separate mixing bowl , combine, the escallion, thyme, slice okra, onion and half the butter, mix well till all is combine, stuff the insides of the fish close to the head with the mixture then add either the cabbage, callaloo or spincah whichever you prefer inside the body cavity.. place a few pat of butter on top of the fich and wrap in heavy duty foil paper and bake inside a 400 degree oven for about 45 mins or so until the fish starts to flake..
Stove Top method
4 or 5 medium size fishes
onion
2 small plum tomatoes
thyme
scallion
2 tablespoon butter
1 scotch bonnet pepper
half cup water
salt
pepper
3 tablesponn ketchup( for coloring)
Wash fish with lemon juice and pat dry, season inside and out with salt and pepper, let sit for about twenty minutes... then place inside a medium size pot with all the seasoning on top and the half cup of water and let steam for about 20 to 25 mins..then add the ketchup and a few pats of butter and let simmer for another five mins or so.. Serve with rice or whatever tickles funny Bone
