Cranberry dressing

[Pepper]

I usually make my own cranberry sauce for thanksgiving dinner. But I have been making just the basic one. Berries, sugar, water.

Does anyone have a recipie that includes other ingredients. I have heard people talk about sauces that include nuts and other niceties, and am really interested in trying one of these recipies.

hi Pepper,do you add orange rind or juice to your basic sauce,gives it a nice kick. anyway got a couple for you

Cranberry Relish

4 cups cranberries
1 orange
1 lemon
1 lime
1 cup sugar

pick and wash cranberries,and put through a food chopper useing the knife blade, wash orange,lemon and lime slice and remove seeds put through food chopper,mix with cranberries and sugar.chill several hours before serving. thats the recipe

Now i find this a little tart so i take off some of the peel.dont discard though,taste if its not too tart for you add the rest of peel.

my mom use to make this one

Cranberry Conserve

1 quart cranberry
1 1/2 cups water
1/4 lb raisins chopped
1/2 lb walnuts broken
1 large orange
1 1/2 lb sugar

wash and pick cranberries then cook in water until all berries have burst.add all othe ingredients and cook 25 mins,stirring frequently and skimming if necessary,pour into jars.

to this if you want you can add

1/8 teaspoon mace
1/8 teaspoon allspice
1teaspoon vinegar
a little lime juice or some pecans

Oranged Cranberry Sauce

" This recipe was graciously shared with me by a Jamaican friend, many years ago. It makes a delicious sauce, different from any other cranberry sauce I've ever tasted or made. It does not "gel" but you do want to cook it long enough to make a good, thick consistency. You can use 1 tablespoon of excellent quality ground cinnamon instead of the cinnamon stick, if you prefer.

2 pounds cranberries
2 tablespoons orange zest
3 cinnamon sticks
1 pint orange juice
2 cups packed brown sugar
2 cups water


Directions
1 Place the cranberries, grated orange rind, cinnamon, orange juice, brown sugar and enough water to cover cranberries in a saucepan. Bring mixture to a boil over high heat. Immediately turn heat down and simmer for about one hour or until the sauce has thickened. Taste for sweetness and adjust with additional sugar if necessary. You can not overcook, so continue cooking until you have a good thick consistency. Let mixture cool a bit then refrigerate in a covered container.

Pepper mi going through Moms stuff and found this one too,an i remember it is really good

Cranberry Walnut Salsa
1 cup walnut
2/3 cup apple jelly
3 cups cranberry
1 large granny smith apple
8 oz chopped dates
1/4 cup apple juice

about 15 mins before serving or early in the day
In a food processer with knife blade attached chop nuts (mi woulda just buy de chopped nuts DWL) set aside.
ina a large bowl with wire wisk or fork,stir apple jelly until smooth.in food processor with knife blade attached chop cranberries pulsing on and off several times,until cranberries are smaller than peas.add to jelly.
cut apple into quarters core but do not peel.chop in food proccessor until same size as cranberry.
into bowl with cranberry mixture, stir apple,walnut,dates and apple juice. enjoy.
