I need ure help. can someone give me a recipe for baked macaroni and cheese salad and also one for potato salad. I am having an event coming soon and I need to prepare these dishes. Since I never made these things before and my guests are requesting them on the menu, I am gonna have to make it for them.

Shel, these are from Patti Labelle's cook book, I am positive they are great.

Over The Rainbow Macaroni and Cheese

Ingredients
1 tbs. vegetable oil
1 pound elbow macaroni
1 stick of butter plus 1 tbs. (real butter please)
1/2 cup (2 ozs) shredded mild cheddar cheese
1/2 cup (2 ozs) shredded Muenster cheese
1/2 cup (2 ozs) shredded sharp Cheddar cheese
1/2 cup (2 ozs) shredded Monterey Jack cheese
2 cups half and half
1 cup (8 ozs) Velveeta, cut nto small cubes
2 large eggs, lightly beaten
1/4 tsp. seasoned salt
1/8 tsp. freshly ground black pepper

Method:
Pre heat oven to 350 degrees. Lightly butter a deep 2 1/2 qt. casserole dish.
Bring a large pot of salted water to a boil over high heat. Add the oil, then the elbow macaroni and cook until the macaroni is just tender, aout 7 minutes. Do not overcook. Drain well. Return to cooking pot.

In a small saucepan, melt the one stick of butter, stir into the macaroni. In a large bowl, mix the Muenster, mild and sharp cheddar and Monterey Jack cheeses. To the macaroni add the half and half, 1 1/2 cups of the shredded cheese, the cubed velveeta
and the eggs. Season with the salt and pepper. Transfer to the buttered casserole dish. Sprinkle with the remaining 1/2 cup of shredded cheese and dot with the remaining 1 tbs butter.

Bake until it's bubbling around the edges, about 35 minutes. Serve hot.

Patti's pointers:
Ask anyone who makes incredible macaroni and cheese for his or her recipe and I bet the Velveeta is in there. But my recipe doesn't stop there. To make my special macaroni and cheese, I also use Muenster, mild and sharp cheddar and Monterey Jack cheeses, each one adding it's own flavor and melting consistency. If you don't want to use all 5 cheeses, you can get away with just the Velveeta and sharp cheddar....it won't be Over The Rainbow but it will be pretty good. And, on special occasions, I sometimes add an extra stick of butter, in which case, the macaroni goes over the moon!!
If you use two sticks of butter, substitute milk for the half and half.

Patti's Potatoe Salad

Ingedients:
3 pounds red-skinned potatoes (that's about 20 potatoes) well scrubbed.
6 large eggs, hard cooked (see note)
1 medium red onion
1 medium green bell pepper, seeded and finely chopped
2 medium celery ribs, finely chopped
2 tsp. celery seed
2/3 cup mayonaise
2 tablespoons yellow mustard
3 tablespoons sweet pickle relish
salt and freshly ground black pepper to taste
Paprika

Method:
Place the potatoes in a large pot and add enough salted water to cover by 1 inch. Bring to a boil over high heat. Reduce the heat to med-low and simmer until tender, but not mushy, about 20 minutes. Be sure they are cooked!
Pour out most of the water and place the pot in the sink. Run cold water over the potatoes for about 2 minutes or until cool enough to handle. Drain well.

Peel the potatoes and cut them into 1/2 inch cubes. Place in a large bowl. Chop 4 of the hard cooked eggs and add to the potatoes, along with the onion, green pepper and celery. Sprinkle the celery seed. Gradually stir in the mayonaise, mustard and relish, being careful not to mash the potatoes. Season with salt and pepper to taste.
Transfer to a large serving bowl. Since the 2 remaining hard cooked eggs and arrange slices on top of the salad and sprinkle with paprika. Cool, cover tightly with plastic wrap and refrigerate until chilled, at least 2 hours.

Notes:
I know that most people actually boil their eggs to hard cook them but if you overdo it, you can get that thin green line around the yolk that everyone just hates. Here's the foolproof professional way to hard cook eggs that cuts down on the actual boiling time to avoid over cooking. Place the eggs in a sauce pan just large enuff to hold them in one layer. Fill with enuff cold water to cover by 1 inch. Bring to a gentle boil over high heat, then cook for about 30 seconds. Remove from stove and cover tightly. Let stand for about 15 minutes. Pour out most of the water and place pan in sink. Let cold water run over the eggs for about 3 minutes. Crack and peel the eggs while still warm.

Patti's pointers:
I use red skinned potatoes because the slices retain their shape when the salad is tossed, russets and Idaho potatoes will crumble. Remember, always choose smooth, firm potatoes that have no bruises. Wash the potatoes just when you are ready to use them. Don't store the potatoes in the refrigerator because they will turn dark when you cook them. Be sure to cut off any greenish discoloration because it will have a bitter taste. For a potatoe salad with a kick, I sometimes spice the salad with 2 seeded and minced jalapeno peppers.

For anyone who is interested, the book is called LaBelle Cuisine (Recipes To Sing About)ISBN 0-7679-00314-5. She has some great short stories to go along with each recipe. It's sold at all major booksellers in the cookbook section, I got mine at Barnes & Nobles at my local mall. I'm sure most online booksellers (Amazon, etc) have it too, just do a search for it. (I paid $25 US for it, but some sellers have it at a sale price if you're lucky) Worth every penny IMHO.
