Apple Crisp
3 apples
3/4 cup oatmeal
3/4 cup brown sugar
1/2 cup unbleached flour
1/3 cup soya margarine
1/2 teaspoon cinnamon
Arrange apples on bottom of dish. Combine oatmeal, sugar, flour and cinnamon. Pour melted margarine over dry ingredients; mix. Sprinkle over apples.
Bake 35-40 mins. at 350 F. Serves 4-5.
Note: Peaches or pears can be used instead of apples - these will bake quicker, approx. 25-35 mins.

Frozen Blueberry Whiz
1 cup frozen blueberries
2 frozen bananas, in slices
4 tablespoon pineapple juice (or more to blend)
Put juice in blender. Add frozen fruit and whiz together. Place in dessert dishes or ice cube tray and freeze for 2-3 hrs. Serve when frozen.
Note: Peaches can be used as well.

Coconut Fruit Medley
1 cup pineapple chunks
2 medium large oranges
1 large banana
1/2 cup shredded coconut
Drain pineapple and save juice. Slice banana into pineapple juice. Peel oranges and cut into cubes. Add all ingredients together, and refrigerate.
Variation -- before serving add frozen or fresh fruit in season such as strawberries, raspberries, blueberries, peaches, grapes or melon.
Very colourful and enjoyable!!
