Would anyone have a recipe for coconut drops? THANKS!!

hi Ruta, weh use to call it cut cake one time DWL
Coconut Drops
1 coconut diced about 2 cups
1 little piece of ginger grated
3 cups sugar brown or white
in a heavy pot (like dutch pot) place coconut and enough water to cover,simmer for about 30 mins. add more water if needed,add sugar,boil for about 15mins. it will get thicken,if you test it in water it will form a ball. butter or damp a cookie sheet and drop by spoonfuls let it cool.

Grandma, you say the sugar kind doesn't matter. What if I use some head sugar? How much can I mix in? Will the amounts of water and other sugars change? Tenks!

weh neva use to use de head sugar,unless it start to dry out,cause it dont hold the coconut in place wen yu drop them, i dont think it can get the thickness of the syrup dats needed.How about yu try half sugar and half head sugar first. Please let me know how it turn out.tanks

Can I pester yu wid anudder question, Grandma.
'Bout de black cake: how flexible is de recipe? Can I replace white rum with a Daniel Finzi flavoured rum (mebbe aringe, passion fruit or pineapple), the brandy with pimento dram and then reduce the sugar? Can I leave out the browning? The jam - can I use any flavour? Mi tank yu.

the black cake should not really be tampered with cause its more like a pudding
White Rum replace with red rum, or whiskey
Brandy use more red rum or whiskey.
pimento has it own flavour so the black cake taste would be too harsh.
browning is not really necessary its really for colouring, hence Black Cake.
jam unless its a blue berry or black berry i would forget it. because this is a pudding,the pectin in the jam helps to hold it together and keep it fresh.
the orange juice helps to cut the rawness of the eggs,without the tartness of lime.
