They both sound absolutely scrumptious but I wouldn't DARE make them: me one would have to eat dem an dat would be a pure disasta!!!

This is a good cheesecake too. If you like your cheese cake a little sweeter you may wish to increase the honey in the filling to 7 or 8 Tblsp.

Ginger Brandy Cheesecake:

Preheat oven to 350*


I. Crust:
2 cups finely-crumbled ginger snaps
5 Tblsp. butter
2 Tblsp. honey

Melt butter and honey toghether. Add to snap crumbs. Press firmly (although not to firm otherwise it goes hard like a rock) into the bottom of an assembled spring-foam pan.

II. Filling:

12 oz. softened cream cheese
1 1/2 cups sour cream
4 large eggs
6 Tblsp. honey
1-2 Tblsp. good brandy
1 tsp. freshly grated ginger root
dash of salt

Whip everything together in a highspeed blender until fluffy (I use my food processor). Pour into sping-form pan and bake with a pan of water in the oven. The cake is done when a toothpick probing the center comes out with nothing clining (aprox. 40-50 mins.)

III Glaze: (wait until cake is completely cool before topping)

3/4 cup orange juice
2 Tblsp. corn starch
2 Tblsp. brandy
1/4 tsp. orange rind

Place cornstarch in a small saucepan. Wisk orange juice into it. Cook on med heat whisking constantly until thick and glossy (approx. 8 minutes Remove from heat. Kepp whisking and add remaining ingredients. Pour over cooled cheesecake. Decorate with strips of candied ginger if desired. Chill thoroughly.

I edited the recipe but I thought I'd post this as a new topic so that anyone that has copied the recipe and doesn't check back on the cheesecake thread would know to add this
