now i would serve this with coffee or tea,cause it a heavy cake,and also chop up the fruits as small as possible,less chewing.
Cream Cheese Christmas Cake
1 - 8 ounce package cream cheese (room temperature)
1/2 lb butter
1 1/2 cups white sugar
1/2 tsp pure vanilla
4 large eggs
2 1/4 cups all purpose flour
1/2 tsp baking powder
1/4 lb red glace cherries, 1/4 lb green cherries, 1/4 lb yellow glace
pineapple
Chop fruit and toss in 1/4 cup of the flour to coat well (set aside).
Cream butter, then add cream cheese and beat until smooth.
Add eggs one at a time and beat thoroughtly after each. Add sugar to egg mixture.
Sift flour (2 cups) and baking powder together and add gradually to creamed mixture beating with an electric mixer. Add floured fruit when batter is well mixed and distribute evenly with a
spatula. Grease angel food or bundt pan ( or 10 " springform) and dust with flour. Bake 70 minutes at 300 F or until cake tests done with toothpick. ( my cakes usually take longer than 70 min)
Cool 5 minutes in pan before turning onto rack.
Drizzle with icing sugar -
1 cup icing sugar
1 tsp salad oil
1 1/2 -2 tbsp warm water
1/4 tsp almond flavoring (optional)
This cake freezes well - if freezing, ice cake/decorate with fruit after defrosting.
