I just returned from a trip to NYC/New Jersey and visited a Jamaican market where I got a bunch of spices, bread, scotch bonnets and cans of Ackee. I know how to use most of these things but have no idea how to prepare Ackees!!! I don't want to ruin them, I won't be returning for more any time soon. Can anyone help???? Thanks...Big up to Patterson, New Jersey...great Jamaican food, shops and entertainment, was like being in Mobay!!!! (except the 30 degree weather)

Mmmmmmm, I do LOVE ackee!
Go and get some salt fish. If you can't find saltfish bacon is a good second, but I would much rather have the salt fish! Put the saltfish in water and bring to a boil, drain and put in new water and boil again for about 20 minutes. Let the saltfish cool down. Now, sautee some chopped up onion, sweet pepper and tomato (I like to use the roma) in a little oil (I use olive oil). When the veggies are tender crisp, add the saltfish that you had taken off the bone while the veggies were cooking. Heat all and then add the ackee. Cover and cook til the ackee is hot. Be careful stirring it and putting it on the plates. The ackees are fragile! Make some fry dumplings and calalloo to have with it. Man, that is my very favorite meal!

psst.... TruBluEyes do nat no how fi cook ackee....so here goes TruBluEyes.
do all dat smaddy tell yu bout de saltfish an ting, open the can of ackee an pour in a big strainer or collender to drain de brine,now mi like to use the strainer,cause some times de ackee mash up from travelling,seen.
den restthe strainer in some boiling water for about 2 mins. then pour it onto the saltfish mixture, also please put 2 slice of the scotch bonnet pepper in it and season with salt an black pepper, enjoy
