hi jenjen here yu go, i have not made these in a long time
Potato Balls
3 lb potatoes
1 cup flour
q cup bread crumbs
2 eggs
sant and pepper
oil for frying
peel an boil potatoes. cool.place flour in a medium bowl season with salt and pepper, put bread crumbs in a second bowl. whip potatoes with salt and pepper to taste (i also love a little garlic) whip until smooth. whip egg white seperately, also whip egg yolk.
form potatoes in balls,dip balls in egg white dip in flour,then dip in yolk lastly dip in bread crumbs. yu can do this early in the day,and set on wax paper. deep fry until crisp and golden.serve hot. -
