Stew Beef (From the Jamaican Cooking Book)
Ingredients
4 pounds stew beef without bones, well trimmed and cubed
1 1/2 tsp. salt
1/4 tsp black pepper
1/4 cup vegetable oil
1 tbs. butter (optional)
2 small onions, chopped
1 clove garlic, minced
1/2 sweet red pepper, seeded and finely chopped
1 tomatoe, chopped
2 1/2 cups water
2 potatoes, cubed
3 carrots, sliced
Add one whole scotch bonnet pepper along with the vegetables.
Method
Place the beef in a large bowl and season with 1/2 tsp of the salt and the black pepper. In a large skillet over high heat, heat the oil until very hot. (keep a lid nearby for splattering oil)
Carefully place some of the meat into the pan without crowding it. Fry for 4 minutes on each side to achieve a golden brown crust. Remove from the pan to a bowl with slotted spoon. Repeat with remaining beef. Turn the heat down to low. (The pan should have a dark brown, not burnt, crust.)
Add the butter, if using. Turn the heat to medium. When it is melted, add the onions and garlic, stirring it constantly until it is dark golden, about 2 minutes.
Add the sweet pepper and tomatoe, scraping the bottom of the pan with a spatula. Cook for about 4 minutes until blended and thickened.
Return the beef along with its juices to the pan. Mix well and add the water.
Bring to a boil over high heat, then cover and reduce the heat to low. Simmer until the meat is tender, about 2 1/2 hours. Add the potatoes, carrots and remaining tsp. salt plus the whole scotch bonnet pepper. Stir, cover and cook for 30-40 more minutes. Remove the whole scotch bonnet pepper carefully, do not burst it. Enjoy.
Simmy's notes:
You can also add in a few (3)whole pimento, 1 chopped scallion and some fresh thyme when you add the water.

Here is di recipe fi stew peas an beef, (most ppl call dis recipe stew peas), is Grandma2's own:
STEWED PEAS
1/2 lb pig tail (mi no eat it but some people do)
1 1/2 lb beef (or meat of your choice)
(*Simmy's note: if yu nuh wan use di pig tail den use 2 lb a di beef. Also can use 1 lb of salt beef with 1 lb of stew beef instead of 2 lb. stew beef, ref: The Real Taste of Jamaica)
2 cups red peas, washed
2 cloves garlic, crushed
1-2 sprigs thyme
2 stalks escallion, ( or 1 onion)
1 whole Scotch Bonnet
1/2 tsp black pepper
1 teaspoon salt
1/2 cups flour for dumplin
1 cup coconut milk or 1/4 box of the cream.
Place peas and meats in large pot along with whole Scotch Bonnet and thyme and cover with enough water to cover completely Bring to boil, then lower heat and cover pot and simmer for about 2 hours or until peas are tender. Add water if necessary during cooking.
When the meats and peas are tender, add spinners,add coconut milk and seasoning,season taste.mi like fi add a little margarine.simmer for about 20 minutes to thicken the stew.if needed stir a little flour in cold water,about 2 tablespoon flour to 1/4 cup water,add to stew for thickening.
