Season Rice

Hello, Everyone!!
Does anyone know how to make "Season Rice"? !!! [img]/forums/images/graemlins/confused.gif[/img] My sister says that it is rice cooked with lots of ingredients including fish. Any assistance would be greatly appreciated!!

Hi Rakar, yu knoh is Sunday mawnin an yu nuh fi hat up people belly,DWL. this use to be like Thursday cookin wen mi a pickney. why, because dats de day wen yu kinda throw all de likle bits or piece a food together inna a pot, so yu get season rice DWL. now yu can mek it all diffrent ways,its up to yu liking,like if yu like pigstail,put piece inna it,all dem stuff deh.yu can put shrimps to,pumpkin,anyway dis is how mi like it.

Season Rice

2 cups rice
3 1/2 cups water ( 1 cup can be coconut milk)
1/2 teaspoon salt
1 can ackee
1 onion chopped
2 stalk escallion
1 sprig thyme
1 clove garlic
1 tomato chopped
1 lb saltfish
some mix veg. (optional)
scotch bonnet pepper couple slices
some margarine bout 3 tablespoon

boil fish,2 times,rinse in cold water, pick out bones.put some cookin oil in a dutch pot (or a heavy pot)when oil hot add onion,garlic,escallion,tomato,thyme and pepper cook for about 4 mins. add saltfish and vegetable cook fi 2 mins.add water an coconut milk if yu use it,wash rice and add with the salt, stir,once it starts to boil,turn the stove to low,add margarine,cover with a tight lid. in the mean time open tin of ackee,pour into a collander or strainer,pour some boiling water over the ackee.wen the water in the rice has dried out little,bout 10 mins, spread ackee on top,do not mix in,sprinkle a little salt an black pepper on ackee,cover an cook for about another 15 mins. wen done,stir in ackee,gently,serve. enjoy
