Re: Saltfish balls
sexy debbie, here's a recipe for saltfish balls:
(Grandma2 says fi stap screaming, shi can hear yu, dwl, hint: tek aff yu caps lock) LOL
Saltfish Balls
Ingredients
1/2 lb. salt fish
2 cups diced, raw potatoes
t tbsp. butter
1/2 tsp. pepper
2 eggs, beaten
bread crumbs
vegetable oil for deep frying
Method
Soak salt fish in water, preferably over night. Boil for 1/2 hour, drain, rinse (boil again if necessary to get excess salt out) rinse under cold water and flake the fish making sure to remove all the bones. (To save time you can buy the deboned salt fish, just check for stray bones after boiling and flaking)
Boil diced potatoes for about 20 minutes, drain.
Add butter, pepper and shredded fish into potatoes, mix well.
Form mixture into light, feathery balls. Dip in beaten eggs, then roll in bread crumbs. (If you don't want to use bread crumbs, then you can roll them in flour)
Fry in deep oil fryer until golden brown. Drain on absorbant paper and serve very hot with a cocktail sauce for dipping.
This recipe makes 12 balls.
Enjoy!!
