Oh yea i forgot to ask if anyone out there knows how to make a sweet potatoe pudding with a soft top??

Sweet Potato Pudding
2 lbs sweet potato (the Jamaican kind)
1/4 lb yam
2 cups brown sugar
1 teaspoon cinnamon
1 teaspoon ginger
1 tablespoon margarine
2 teaspoon vanilla
1/2 teaspoon nutmeg
1/2 cup raisins
1 coconut grated
1 quart hot water
4 cups coconut milk
grate sweet potato and yam with the grater not a shredder.grate coconut,use 2 cups hot water at a time to juice grated coconut,strain until yu get the 4 cups.
combine the grated potato yam mixture with coconut milk,sugar,spices,rasins,add vanilla and butter. pour into a greased baking pan bake at 300 degrees for an hour. please use a large coconut.

swp, I see them in the produce section of some supermarkets under the name batata. They have a thin reddish/brownish skin.

grandma2, tried this one last weekend. It was quite tasty. Never made potato puddin with yam in it before, but it give a nice flavor. And the ginger gave it that extra zing. Another keeper. [img]/forums/images/graemlins/smile.gif[/img]

Peppa- the sweet pitata is also called BONIATO, in hispanic shops and even regular grocery store[/qb]
Blender can't do it....you would need a very good food processor or an electric meat grinder.
