Fried chicken

Can someone help me out with a fried chicken recipe please?

Do you use egg or milk or both? What are your favourite seasonings to use?

I'm having some friends round next weekend and would like to do this. Any help would be greatly appreciated.

Hi Hipnotizze, here's a recipe I use from the Jamaican Cooking Book, I altered it a bit by using flour instead of bread crumbs and deep fried it instead of using the small amount of oil they recommend. You can do it either way you choose, I prefere my way. These are the only 2 real changes I personally made. It turned out very good and tastey.

Ingredients:
6 pounds chicken parts (or 2 whole chickens, cut up)
salt and pepper to taste (they recommend 2 teasp. salt, 1 1/2 teasp. black pepper but I use more than that, plus I also add garlic POWDER (not garlic salt), just season it to your tastes)
1 1/2 teasp. dried thyme
2 onions, sliced
3 cups plain bread crumbs (I coated the chicken with flour instead, just make sure it's well coated, shake off excess)
2-3 eggs
1/2 cup vegetable oil (I used enuff oil to deep fry the chicken, that means fill each pan about 1/2 way with oil)

Method:
Rinse the chicken parts well in cold water and pat dry with paper towels. Cut chicken (if whole) into pieces. Place the chicken pieces into a large bowl and combine with salt, pepper (and the garlic powder, if you want to use it, it adds a nice flavor), plus the thyme and onion slices. Cover, and leave it to season refridgerated for 1 hour.

Spread out the bread crumbs on a plate. (I put the flour in a bowl, or plastic bag) In a small bowl, beat the eggs together and pour them over the chicken, coating each piece completely. Roll each chicken piece in the bread crumbs. (I coated the chicken well with the flour in the bowl or shook the pieces in the plastic bag with the flour, be sure to shake off the excess flour, this way you can coat a few pieces at a time.)
If possible, heat the oil in 2 large frying pans, over HIGH heat until very hot, (otherwise cook it in 2 batches) Place half the chicken in each pan and brown on both sides, cook about 40 minutes, turning it once or twice during the cooking time after initially browning it. (If necessary, after you've browned the chicken, you can lower the heat to med-high) Remove the chicken to a plate covered in paper towels to drain off oil. Serve immediately.

Note: This chicken is excellent cold and is a perfect choice for a picnic also.

You can experiment with all types of seasonings. Red pepper, white pepper, garlic, etc.. I've even used some Italian seosonings like basil and oregano.
My chicken occasionaly comes out dry. Anyone with any tips on how to prevent this?

EdiS darlin,yu fry it a little too long,to make sure it fry good,wen yu put it in de hot oil,cover it for 4 mins, take off de coverer fry for 4. den do the other side de same way. dat way it kind of steam de inside,but wid de cove off it crisp it back up,ok baby,let mi know

grandma thx for the tip about the chicken my job fot thksgivng is frying ALL the chicken and sometimes my batches come out tooo dry cuz i wanna make sure its cooked on the inside or cuz im watchin TV but anyway i will try your tip hope it works 4 me

People People People!

Can I just Say and even bigger thank you. The chicken came out perfectly and I got NUFF compliments.

I used the garlic powder aswell that Simmy suggested and the advice was correct. It gave it a wicked touch!

Needless to say I'll be doing it more when my friends come round!
