I haven't been home since November. One dish that always awaits my arrival is Chicken Foot. I live in east bofunkt in Colorado and there aren't many Jamaicans for miles. The other day I found chicken foot at the grocery store (must be the mexican influence) and I need to cook it ASAP but don't know how. I remember it having a curry flavor. Anyone? I sent a letter home but I can't wait that long!!!

Sorry, de "itis" chetch me when mi belly full.
Not being a very good chef, di foot never really had the yard taste, but as is said "can eat". I think my curry powder is weak, because even my curry chicken these days taste wantish.
I will try again soon now that I have a source.
Tomorrow: Oxtail, caan go wrong there!

Why not mix up some of your own? This one is my attempt to replicate 'di Turban Man':
OLD-FASHIONED TRINI CURRY POWDER MISS PEACHES
8 Tbsp. ground Coriander
5 Tbsp. ground Cumin
2 Tbsp. ground Fenugreek
1 Tbsp. celery seed
1 1/2 Tbsp ground fennel seed
Ground hot peppa to taste (some like it mild)
Mix well and store in a tightly covered container in a cool, dark place.
They don't seem to make this anymore but it's my favourite [img]/forums/images/graemlins/laugh.gif[/img]
Just make sure all the spices are fresh. You should be able to buy them in bulk for very reasonable prices at a local 'natural foods' store.

I'm eating di "what lef" for breakfast as we speak, and it is definately sweeter the next day.
I'll try the curry recipe, I have all those except the fenugreek, never heard of that. I'll be on the look out for it the next time I'm in the big city. Telluride is a small town, pop. 2000, nothing much to choose from here.

You're more than welcome and best of luck. You can always leave out the fenugreek and try it without until you manage to find some. Fenugreek has only a mild sort of 'maple-like' flavour anyway and so the curry powder might be just fine without it. Give it a try and let us know how you like it.

Curry Chicken Fut
2 lb chicken fut (already cleaned)
2 stalk escallion
1 sprig thyme
1 small onion
1 scotch bonnet pepper
2 cloves garlic
1/2 cup coconut milk (optinal)or
1/2 cup water
2 tablespoon curry
1 teaspoon sugar (in case yu use too much curry)
1 teaspoon salt
1/2 teaspoon black pepper
6 pimento seed
1 medium potato chopped
4 tablespoon cookin oil
chop up your chicken foot and set aside. take a heavy pot or dutch pot heat cooking oil to hot, add your seasoning, garlic,onion,thyme,pepper pimento seeds,fry for 3 mins,add curry cook for 3 more mins add chicken foot,stir well add salt an black pepper,cover on medium heat for 2 mins.add the coconut milk or water,cook for about 1./2 hour stirring every 10 mins or so. if need more water add.when tender add potato and scotch bonnet cook again for 15 mins,check seasoning. because there is no meat on the foot,if it taste a little bitter add the sugar. also a little margarine. enjoy.
this can also be pressured. do every thing as above. when yu add the water or coconut milk cover pressure for 15 mins.release and adjust seasoning.
