here is a carrot cake recipe that will make everybody's mouth water.
3cups flour
3cups sugar
1tbsp baking soda
1tbsp baking powder
1tsp cinnamon
1/2 tsp salt
1 1/2 cup carrot pulp from juicer
1 1/2 cup pineapple pulp from juicer
pulp of 5 large strawberries from juicer
1 1/2 shredded coconut or trash from juicer
1 1/2 cup of chopped walnuts (optional) but good
4 eggs lightly beaten
1 1/2 cups olive oil
sift all dry ingredients into a mixing bowl.
Add oil, eggs and vanilla and mix at low speed
till smooth. Fold in all other ingredients and
mix just till completely blended. You have enough
batter for two 8" round cakes or bundt cakes or
two 9"X 11" sheet pans. Line pans with wax paper
and bake at 325 degrees F. till cake bounces back
when lightly touched and pulls away form the sides of pan. Let cool for 2-3 hours if you wish to frost.
For a light frosting
combine 3cups confectioners sugar with 8ozs cream
cheese (softened) and 3 tbsps softened butter and
1 tsp lemon juice. Mix on low speed till completely smooth. Prepare ahead of time and refrigerate till cakes are ready to frost. For 9"x 11" sheet cake use to fill and frost the sides
sprinkle top with the balance of confectioners sugar.
Oh! weh yu do wid di juice from di carrots and tings? Drink it! It tase good yu si.
