Better late than never eh?
I may not be able to describe some of the ingredients properly but will try...
Morogo ( I think its what you call greens)...
We use indigenous leaves plants like bean plant leaves.
First the leaves are washed, then you add salt and boil them for about an hour.
Next, drain the water out, pound the leaves and make them into small clumps.
Lay them out in the sun to dry. This dried version can then be stored as long as you wish.
TO prepare them for eating...
Take the dried clumps, add a little water and oil.
Cook for half an hour.
Logala (porridge made with milk)
Boil milk and make a paste of sorghum with water ( use about 1/4 cup water to 1 cup of sorghum).
Add the paste to the boiling milk and stir .
Cook for 45 minutes on low heat stirring occassionaly to get rid of lumps.
Dikgobe
Boil about 3 litres of water
add about a tablespoon of oil. teaspoon of salt and 3 cups of brown beans
Cook for 45 minutes
Add dried corn and boil for a further 45 minutes
Reduce heat and simmer for about 90 minutes.
Seswaa
Here you just boil meat until it is overcooked and falling apart. Drain the water and mash the meat to shred it. You can add a little oil if needed. Oh and dont forget to add salt.
this is served during funerals and weddings and its very nice. Usually done using beef but you can use any meat you like.
Lastly... Diphaphatha
This is a traditional form of pitta bread.
Mix bread dough - flour, water, salt , yeast ( hope you use that ), and a dash of sugar.
Make round balls and flatten them into a disc shape,
Put a flat cast iron sheet onto hot coals
When the sheet gets hots, sprinkle some flour over it and place the dough balls on.
Keep turning them until they are done in the centre. (the y cook very slowly)
WE also have serobe (tripe). I iwll try to come up with more traditional dishes as there are lots more here. I mean there are over 10 tribes in my country and tehy all have their traditional dishes and ingredients. [img]/forums/images/graemlins/laugh.gif[/img]
