does anyone in here know of that old time recipe called "rundung",its made with coconut milk and flour and i believe saltfish and a touch of tambric.I would love to be able to make it,my grandma used to make it in jamaica on "poor days".

neutral, here's Grandma2's recipe fi mackeral rundung, if yu wan use saltfish, jus use it instead a di mackeral. Mek sure yu bwail out di salt and pick out di bones fus, den flake di salt fish.
Mackerel Rundung
1 whole coconut grated (yu need about 5 cups of milk)
1 lb mackerel
1 onion chopped
1 scotch bonnet pepper, seeded and minced
1/2 teaspoon black pepper
salt to taste
2 cloves garlic, minced
4 sprig thyme (or 1 tsp. dried)
2 stalk escallion, chopped
spinners (optional)
4 pimento seed crushed
Place the mackerel in cold water,bring to a boil,pour off and repeat. After draining second time set aside in cold water.
Simmer coconut milk in heavy pot until milk begins to turn oily,about 1 hour,add the other ingredients, simmer, pickup mackerel,(nat in yu hand silly DWL) no some people love it wid de bone some dont, its up to you. Add to the pot with the coconut and stuff,cook for about 15 mins.taste, add salt if needed,enjoy wid some boil dumplin an boil banana.
Simmy's notes:
Can also use 2 tomatoes, chopped and 1 tbsp. white vinegar. Add the tomatoes in when you add the onion, scallion and garlic. Add the vinegar in with the mackeral or salt fish. (Tomatoes & vinegar are both optional)

STEWED PEAS
1/2 lb pig tail (mi no eat it but some people do)
1 1/2 lb beef (or meat of your choice)
(*Simmy's note: if yu nuh wan use di pig tail den use 2 lb a di beef. Also can use 1 lb of salt beef with 1 lb of stew beef instead of 2 lb. stew beef, ref: The Real Taste of Jamaica)
2 cups red peas, washed
2 cloves garlic, crushed
1-2 sprigs thyme
2 stalks escallion, ( or 1 onion)chopped
1 whole Scotch Bonnet
1/2 tsp black pepper
1 teaspoon salt
1 cup coconut milk or 1/4 box of the cream.
Place peas and meats in large pot along with whole Scotch Bonnet and thyme and cover with enough water to cover completely Bring to boil, then lower heat and cover pot and simmer for about 2 hours or until peas are tender. Add water if necessary during cooking.
When the meats and peas are tender, add spinners,add coconut milk and seasoning,season taste. Mi like fi add a little margarine. Simmer for about 20 minutes to thicken the stew.if needed stir a little flour in cold water,about 2 tablespoon flour to 1/4 cup water,add to stew for thickening.
Spinners (in case yu need di recipe)
1 cup all purpose flour
1/4 tsp salt
1/3 cup cold water
Sift together the flour and salt. Stir the water in slowly, with your hands, knead the mixture to form a soft and smooth dough. Add the water a little at a time as you knead to be sure not to use too much water. (Be sure to knead well, until the mixture gets soft and smooth) Add the spinners to your pot about 20 minutes before cooking time is over. To form the spinners, pinch a little bit of dough (about 1 inch diameter size) and roll between your palms to form a long piece of dough, 2-3 inches long about 1/2 inch thick. Drop them in the pot.

Tripe and Beans
1 1/2 or 2 lbs tripe
2 teaspoon salt
2 irish potato
2 stalk escallion
2 cloves garlic
1 sprig thyme
1 scotch bonnet pepper
1 onion
1 teaspoon black pepper
6 pimento seed
2 teaspoon curry powder (optinal)
juice of a lime
2 tablespoon margarine
3 tablespoon cooking oil
1 cup broad beans uncooked or 1 can
spinners
cut the tripe in small peices. place in a pan of cold water enough to cover it add lime juice. rinse and drain. heat oil an margarine in a pressure cooker or a heavy pot,add onion,garlic and tripe and lightly brown. add enough water to cover tripe.wash beans and add,add salt (if you use can beans do not add). pressure for about 20 mins until tripe and beans are soft. add spinners and all the other ingredients (this is when you would add the can beans)simmer till done.adjust seasoning.
now if you are going to curry it,add the curry to the oil and margarine with the garlic and onion,then the tripe,and continue. enjoy
