Peppered Steak recipe

Searched the WWW for Peppered Steak recipe but the ones I keep finding are a far cry from how peppered steak is done in Jamaica ~~ the steak cut into small strips, with soy sauce (ah so doh?) and cooked in slices of green pepper.

SandiF, I'm posting a recipe from the Caribbean Chinese Cookbook, maybe this is what you're looking for, let mi knoh. My notes are in parenthesis. Also, there's a big difference if you search for peppered steak as opposed to pepper steak. Try doing a search for the latter and you'll see the difference yourself. Pepper steak

Ingredients
1 lb. beef, striploin, fillet
1 tbsp. soy sauce
1 tbsp. oyster sauce (optional)
dash of pepper
2 cloves garlic
2 slices ginger
t tsp sugar
1 tsp corn flour (corn starch)
2 tbsp oil
1 sweet pepper, sliced (or half a green and half a red sweet pepper, prettier this way.)
1 onion, sliced
1 tomatoe, sliced

Method:
Slice beef into very thin strips across grain.
Season with soy sauce, oyster sauce, pepper, garlic, ginger, sugar and cornflour. Heat oil in wok or non-stick pan. Stir fry, turning constantly until beef changes colour. Remove from pan and set aside.
Stir fry sweet pepper, onion and tomatoe for 1 minutes (longer if you want them soft).
Add beef to vegetables. Cook for 1 more minute. (Want a bit of gravy, add a couple tbsp. water and cook for a few more minutes, stirring mixture and let simmer.)
Serve with white rice.
Variation:
Veggies can be substituted with pap chow, cabbage,
string beans or cho cho.
Serves 4

Pepper Steak

2 lbs beef
1/2 teaspoon ginger
3 stalks escallion
3 cloves garlic
2 tablespoon soya sauce
1 tablespoon oyster sauce
1teaspoon salt
4 tablespoon cooking oil
1 sweet pepper cut in strips
1 tablespoon cornstarch
1 3/4 water

cut steak in strips. place in a bowl with ginger,escallion,garlic,sauces and salt. work ingredients into meat,leave to marinate for 2 hours,or more.heat oil in heavy pot,sautte pepper.remove. fry meat in same oil until brown,then return pepper to pot,with any remain marinade. mix cornstarch with 2 tablespoon water an add to the pot with the remaining water. stir till the sauce thickens. serve hot wid rice.enjoy
