That would be cinnamon, ground ginger,
bout a 1/2 tsp. each and 1/4 tsp of nutmeg.
I have another recipe for blue drawers I found in one of my cookbooks, posting it here for you, as you can see, it can also be made with cornmeal, instead of bananas, and you could try adding about a 1/4 cup of raisins to the mixture as well. (Lot of variations to it.)
Why don't you ask your friend which he'd prefere? (might be a good idea to do that) Also if you can't find banana leaf or it's not available, you can use aluminum foil and string, the taste is just as good. [img]/forums/images/graemlins/laugh.gif[/img]
Duckanoo (blue drawers)
Ingredients:
2 cups yellow cornmeal
1/4 cup sugar
1/2 tsp. cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground nutmeg
1/2 tsp. salt
1/3 cup shredded, unsweetened coconut
1 1/3 cups coconut milk
1/2 tsp. vanilla
banana leaves
Method:
In a large bowl, combine the cornmeal, sugar, cinnamon, ginger, nutmeg and salt. Mix in the shredded coconut. Blend in the coconut milk and vanilla.
Cut the banana leaves into large rectangles (peeling off 20 large strings for tying).
Pass each leaf thru a pot of boiling water to soften it before putting a large spoonful of the cornmeal mixture in the center. Gently roll it up and turn over both ends. Using a piece of the string, tie it in both directions like a parcel.
Repeat the process until the filling is used up. Stack the parcels into a steamer and cook for one hour, or drop them into a pot of boiling water and cook for 1 hour.

The banana leaf doesn't affect the flavour, but that's the way it's cooked in Jamaica and Africa. Hence the name *Tie-a-leaf*. Banana leaf was available way before foil an string. [img]/forums/images/graemlins/laugh.gif[/img]
You can try all sort of variations, mix the ingredients or use them separately (banana, cornmeal, (Jamaican)sweet potatoe, you get the idea, right?) Try it with and without the raisins too. [img]/forums/images/graemlins/laugh.gif[/img]
