Pickled Scotch Bonnet Pepper

I have about 50 scotch bonnet pepper, an a dont want dem to go bad. So what would you suggest, in order to keep it strong for future use.

When I was a likkle girl, mi granfada used to pickle them, but a dont have a recipe.

Anybody can help me

hi Colleen Dawn, welcome to the board. yu can freeze de pepper dem to yu knoh an use dem as needed. weel here is de way i make my peppers

Hot Pepper

20 hot peppers,slices,or more(use gloves)
1 cho cho sliced (optional)
1 carrot sliced (optional)
2 onions, sliced
12 pimento seed
vinegar to cover

layer hot peppers with chocho,carrot and onions, in a clean dry jar.add pimento seeds.pour on enough vinegar to cover peppers or fill jar. cover good in about 2 week,but can be used instantly.

always use a clean spoon or fork in jar.enjoy

Colleen, I recently learnt from a friend that you can freez them. After washing and drying, put them in a plastic container with a tight lid and keep in your freezer. You can retrieve them one at a time for cooking purposes. The flavour and the heat will still be there. Happy cooking!!
