Wow, didn't know that rice and peas would end up being such a hot topic!
Just to complicate things further, I did try making the rice yesterday with dried kidney beans. I'm going to have to try a market, the local grocery store only had dried kidney beans, chick peas, white navy beans, but nothing like the green or red peas. Breeze wasn't too thrilled about kidney beans...
The rice was pretty good, but of course there is always room for improvement. I soaked the beans, and then boiled them with the garlic and the onions. I then left the water in when I added the rice and topped it up with the 1/2 cup cocunut milk and water - Next time I think I will boil the beans without seasoning, drain, then add the garlic and onion, water and milk.
I think the starch from the beans made the rice a little stickier but not bad. The first time I made it I added too much coconut milk and ended up with that gooey mess.
Didn't know rice could get so complicated. Using your finger to measure sounds like an easy tip - does it matter how long your finger is???

The jerk chicken turned out GREAT! We used half chickens (not cut up) Breeze did the broiling - on charcoal for a few hours - can't beat it!
